This vegetarian summer breakfast is pretty easy as well, it will take you no more than 2 minutes to pull together and will certainly keep you going until lunch with, maybe, a handful of nuts mid morning.
A glass of fruit juice
Some prunes or fruit salad with plain vegetarian yoghurt, you can of course substitute in regular yoghurt if you eat dairy.
1 slice of wholemeal toast with a teaspoon of jam or marmalade.
Sometimes it is really the simpler things in life that are the most rewarding and comforting. This might seem like it’s too simple to be of any real nutritional value, but with the fruit, bread, sugars, and protein you’re getting all you need to start the day off well.
When I have this for breakfast I use a really good loaf of seeded wholemeal bread. Not enough people in the house eat it for me to keep it fresh, so when I get it home from the store, I slice it and keep it in the freezer to take out as and when I need it. People often say to me that it’s so expensive to run a household of vegetarians and non vegetarians, but if you do these simple things it doesn’t have to be any more expensive at all. This way you don’t end up with a huge amount of waste either.
